Mataki Usal(Moth beans curry)


Introduction:
Matakichi usal is very common in Maharashtrian cusine. Mataki or moth beans are a high source of protein.

Ingredients :
1) 1 Cup Sprouted Mataki
2)
Peanuts 1/4 cup(Soaked in water for 3-4 hours)
3) grated fresh coconut 1 cup
4) fresh chopped coriander leaves 1/2 cup
5) green chilies 4-5
6)ginger 1/2 inch
7)Garlic-5-6 cloves
8)Curry leaves-6-7
9)Oil-1 tbsp.
10) 1/2 tsp Mustard seeds
11)1/2 tsp Cumin Seeds
12) Pinch of Asafoetida
13) Turmeric powder-1/4 tsp.

14)Salt to taste
15)jaggery powder to taste
16)Goda masala-1tsp.

Method :
1) Boil the sprouted mataki with soaked peanuts in a pressure cooker until one whistle.
2) Grind coconut,coriander leaves,chilies,ginger,garlic,curry leaves to fine paste.
3) Heat oil in a frying pan,add mustard seeds,cumin seeds,asafoetida,turmeric powder.
4) Now add the paste,& fry for 2 minutes,add salt,jaggery powder,goda masala,& fry for another minute.
5) Add boiled mataki & peanuts and mix it well.
6) Fry for 2 minutes,add water for required consistency.
7) Serve hot with roti,chapati or rice.
