Dudhi-Halwa

Ingredients:-

Grated Lauki (Bottle gourd) -1 medium
Pure desi ghee-1 Tsp.
Broken cashews-1/2 cup
Amul mithaimate(condensed milk)-1 small can
Whole milk-4 cups
Raisins-1/4 cup
Few saffron strands
sugar-As per taste
Cardamom powder-to garnish
Dry fruit powder-to garnish

Method:-

Heat up the pure desi ghee in a pan on a medium heat,

Add cashews & fry till they start changing their color,

add grated lauki,& fry for few minutes,till lauki starts becoming soft.

Add milk,& keep stirring so that it will not stick to the bottom,

As the milk starts evaporating,add a full can of condensed milk,to give it a better taste,& extra creaminess.

Add raisins & saffron strands,at this point of time.

As the milk evaporates completely,& lauki is cooked,add sugar.

Remember that condensed milk is already sweet,so adjust the sweetness as per your taste.(Some people like more sweet,some like medium sweet,so you need to adjust sugar as per personal taste.)

Fry for 2 minutes.Garnish it with cardamom  powder,& crushed dryfruits.

Serve hot or cold.
