Gajar Halwa....

Gajar halwa is the most loved dessert in India,This is simple & easy version of gajar halwa,without using khoya/mawa,which is traditionally used in gajar halwa,It is difficult to find khoya here in US,so you can exclude using khoya,& yet enjoy this wonderful extremely delicious recipe.

Ingredients:-

1)4 cups shredded carrots(around 2lb.)
2)1 Tbsp.Pure ghee
3)Broken cashews-8/10
4)Golden Raisins-1 tbsp.
5)Heavy cream-1 cup(you can substitute it with Ricotta cheese)
6) Whole milk-1 cup
7)Sugar-11/2 cup
8)Cardamom Powder-1/4 Tsp.

Method:-

1)Firstly wash & peel the carrots,using bigger holes on the grater grate the carrots.
2)In a pan,heat pure ghee,add cashews & rainsins,fry for a minute,add grated carrots,& fry on a medium heat for 2 minutes.
3)Add heavy cream & milk,& let the carrots cook in the cream & milk,keep frying till the milk evaporates.
4)Add sugar,& keep frying till the mixture thickens up.
5)Garnish it with cardamom  powder,& serve hot or cold.
