Ingredients:-
For Idli flour
Idli rava-2 cups
Udid dal-1 cup
Methi seeds-1 tsp.
Salt-to taste
oil-1 tbsp.
Sambar
Cooked toor dal-1 cup
veggies of your choice-1 cup
(I prefer onion,tomato,potato,carrot)
finely chopped onion-1
chopped tomatoes-2
chopped boiled potato-1
chopped carrot-1
curry leaves-4/5
sambar powder-1.5 tsp.
salt-to taste
sugar-to taste
water-as required
For tempering:-
Oil-1 tsp.
mustard seed-1/2 tsp.
Hing-1/4 tsp.
Turmeric powder-1/4 tsp.
Method:-
For making Idli flour
1)Soak Idli rava & Udid dal seperately for 4-5 hours minimum,soak methi seeds with the udid dal.
2)Grind them together,to medium thick consistency.
3)Add salt per taste,& oil to the batter.
4)set aside for fermentation,till the batter comes up.
5)put the batter in the Idli moulds,& steam them for 15 mins.
6)Serve hot with chutney,& sambar.
Sambar:-
1)Pressure cook toor dal .
2)Heat oil in a pan,add mustard seed,pinch of hing,1/4 tsp.turmeric powder for tempering,when it starts spluttering,add curry leaves,& finely chopped onions,fry for a minute.
3)once the onions starts sweating,add tomatoes,& fry till tomatoes are pulpy,add salt,sugar,& sambar powder,& fry for another minute.
4)Now add potatoes,& carrots,fry till the carrots are cooked.
5)Now add cooked toor dal.
6)Fry for a minute,& add water as per required consistency.
7)Boil it for 3-4 mins.
8)Serve hot with Idli.
