Baked eggs & rice(Protein rich food)


Ingredients:
eggs-4
cooked rice-2 cup
butter-2tsp.
olive oil-1 tsp.
garlic(chopped)-4 cloves
onion(chopped)-1 medium
button mushrooms(sliced)-10
spinach(chopped)-1 cup
salt-to taste
black pepper-to taste
fresh cream-1/2 cup
parmesan cheese(grated)-1/4 cup

Method:
1)Heat a pan,add butter & oil,when butter melts,add garlic,onions,mushrooms,& saute.
2)Add spinach,salt,pepper powder & stir well.
3)Add cooked rice,& mix well.add fresh cream,can be substituted with milk,mix well.
4)Transfer the mixture into a baking dish.
5)Sprinkle half parmesan cheese,break the eggs one by one over the rice,& let them settle at little distance from each other.
6)sprinkle the remaining cheese.
7)put the dish in microwave/oven& cook it for 5 mins,or till the eggs are done.
8)serve hot.
