Low calorie Spinach Delight-by masterchef Sanjeev Kapoor


Ingredients:-
Spinach blanched & pureed-2 bunches
carrots thin slices-2 medium
French beans-5-6
Cauliflower florets-1 cup
green chilies-3-4
ginger-1/2 inch
garlic-4-5 cloves
oil-1 Tbsp.
Finely chopped onion-1 large
Chopped tomato-1 large
Nutmeg powder-1 pinch
cumin seeds-1/2tsp.
salt-as per taste
Red chili powder-as per taste
Garam masala-1 tsp.
chopped fresh coriander leaves-1/4 cup

Method:-

In a non-stick pan,fry finely chopped onion without any oil,the moisture in the onion will go away as you keep frying & it will turn pinkish brown,keep it aside.

Now in the same non-stick pan,add 1/2 tbsp.of oil,fry finely chopped ginger & garlic for a minute,now add spinach puree,salt,& nutmeg powder & fry for a minute,add fried onion & mix well.add 1/2 tsp.garam masala,& keep aside.

In another pan,add 1/2 tbsp.of oil,add cumin seeds,chopped tomatoes,salt& fry for a minute,now add slightly blanched cauliflower florets,green beans,carrots,& toss it once,add red chili powder,& garam masala 1/2tsp.

Now in a serving bowl,take palak curry,& in the center add fried vegetables,serve hot.
