Masalebhat...(Maharashtrian spicy rice)


Ingredients:-

1 cup long grain basmati rice
1/4 cup chopped fresh coriander
1/4 cup fresh grated coconut
4-5 green chillies
4-5 curry leaves
1 inch grated ginger
3-4 cloves of garlic
Masalebhat masala-1 tbsp.(2 tbsp.coriander seeds,2tbsp.cumin seeds,3-4 black papers,3-4 red chillies dry roast,& grind them)
Maharashtrain goda masala-1 tsp.
6-7 cashew nuts
10-15 raisins
1 cup green peas
salt-to taste
sugar-1 tsp.
Jaggery-1 tsp.
2 tbsp.oil
1 tsp.mustard seeds
1/2 tsp.asafoetida
1/2 turmeric powder

Method:-

Grind freshly chopped coriander,freshly grated coconut,green chillies,curry leaves,ginger,garlic with a pinch of salt,sugar,& just a small amount of water.

Wash the long grain basmati rice,& keep aside.

In a pressure pan,heat 2 tbsp.oil,add mustard seeds,asafoetida,turmeric powder.
Add chashew nuts,& fry them for a minute,add freshly ground masala,& fry it for a minute,add green peas,raisins & fry them for 2 minutes.

Now add washed basmati rice,& fry for about 2 minutes,add salt,sugar,jaggery,masalebhat masala,goda masala,& fry for 2 minutes.

Add 5 cups of hot water,& pressure cook upto 3 whistles.

Garnish it with freshly chopped coriander leaves,freshly grated coconut & lemon juice.

Serve hot with fresh desi ghee.
