Puran poli....


Ingredients:-

For Puran(Sweet stuffing)
*1 cup split Chana Dal
*1 cup Light Jaggery Powder
*Pinch of Nutmeg powder
*1/4 tsp Cardamom powder
*1 cup Water 


For Dough

*1 cup Whole wheat flour

*1/2 cup Maida / All Purpose Flour
*1 tbsp Oil
*Salt to taste

Method:-


First we'll prepare Puran,or the sweet stuffing for the Puranpoli
1) Wash and soak chana dal in enough water for 6-8 hours.
2) Add chana dal in pressure cooker, add a cup of water and pressure cook until 4 whistles.
3) Mash boiled chana dal,add jaggery powder in to it, mix well and blend it till it becomes a smooth paste, microwave the mixture on high power for 4-5 minutes,take out the bowl after every minute,& give it a quick stir,so that it will get evenly cooked,let it cool down completely,mixture becomes thick after cooling down completely.
4) Add cardamom powder, a pinch of nutmeg, mix well. Now Puran is ready.


For the Dough
1) Take maida, whole wheat flour in to a deep bowl, to that add a pinch of salt and mix well.Heat oil & add the hot oil into the mixture
2) Add water and start to knead the dough.

3) Cover and let it rest for 1 hour.
4)After 1 hour again take 1 tbsp.of oil,& a splash of water into the pan,& knead the dough into this mixture once again as this dough need to be sofer,& loose.

Rolling the Puran poli with the stuffing is the most difficult part,it needs lot of practice & mastery,that's why they say in Maharashtra if a girl knows how to make Puranpoli she knows everything about cooking:)



For Making Puranpoli



1) Take small ball from dough and roll it into a smaller round like puri.
2) Take equal portion to dough of Puran.

3) Stuff puran in to rolled puri, seal the edges and squeeze out excess dough from it.
4) Roll it very gently,so that the puran will spread evenly inside the poli.Do not put any pressure while rolling the poli.
5) Lift the poli very gently on the rolling pin,& spread it on the hot pan for roasting.
6)Roast the poli from both the sides.
7)Serve it hot with with lot of ghee,or warm milk.



It tastes heavenly with Maharashtrian version of potato sabji(Batatyachi bhaji) & traditional katachi aamati.
