Shrimp & Pineapple Burger

Ingredients:-

Large shrimps cooked deveined tail off (8-10)
cajun seasoning-as required
Cornflour-1 Tbsp.
oil-for frying

Pineapple chunks-1 medium can
Onion-1 big finely chopped
Serrano peppers:-1/2
oil-1 Tbsp.
cumin seeds-1/2 Tsp.
Fennel seeds-1/2 Tsp.
Turmeric powder-1/2 Tsp.
Light Mayo-1 Tbsp.
Fresh cilantro-1/4 cup finely chopped
Lettuce leaves-as requied
Tomato slices-as required
Burger buns-2/4

Method:-

First make the filling for the burger,Finely chop onion,scoop out the seeds & flesh of serrano pepper to exclude the heat & just get the peppery flavor,chop the pepper finely,heat up the oil in a pan,& add finely chopped onion with pepper,add cumin & fennel seed,fry it for a minute,add turmeric powder,fry it for 1 more minute,add pineapple chunks excluding the juice,chop the chunks if they are too big,fry it for 2 more minutes,take it out in a bowl,& let the mixture cool down,add light mayo for binding & fresh cilantro.

Salt the shrimps,& let them sit for 5 minutes,after 5 minutes wash the shrimps to take out extra salt,marinate it with cajun seasoning dip it in cornflour & fry it on a skillet with very little oil.

For arranging the burger,use the burger bun of your choice,arrange the pineapple filling,shrimps,lettuce,tomato slices,seal the burger with a tooth pick,& serve.
